Resumo:Cerrado biome is a tropical Savannah that produces a diversity of fruit species with important characteristics for application in food industry, such as mangaba (Hancornia speciosa Gomes) and puçá (Mouriri elliptica Mart.). By-products are generated during these fruits processing and present a variety of microorganisms of potential interest to food industry. Previously, two lactic acid bacteria (LAB) were isolated from the by-products (seeds and peels) of these fruits and 16 s rRNA gene sequencing revealed the identity of strains as Pediococcus acidilactici M7 and Pediococcus acidilactici P2. Pediococcus sp. are recognized as an important microorganism for application in the food industry and food processing. Therefore, this study aimed to verify the in vitro technological aspects of these isolated strains. At first, mucin degradation was evaluated to confirm the safety properties of the strains. The diacetyl production was tested and subsequently the proteolytic and lipolytic activity. Additionally, antagonistic activity against Listeria monocytogenes (ATCC 19111) and Bacillus cereus (ATCC 11778) was evaluated. For all tests, strains were stored at – 80 ºC in De Man, Rogosa and Sharpe (MRS) broth and 2% glycerol, and reactivated in MRS broth for three consecutive times, at 37 ºC for 24 h under anaerobic conditions. The assays were performed in triplicate in three independent experiments and results were expressed as the average of the obtained data. None of the tested strains were capable of degrading the mucin, leading to continue the subsequent essays. P. acidilactici P2 and M7 were classified as medium and weak diacetyl producers, respectively, showing that M7 could represent an important role in the development of flavoring agent in fermented products. Regarding proteolytic activity, only M7 showed positive results, which could represent higher levels of soluble proteins and delivery of free amino acids in food matrices. None of the strains showed lipolytic activity. P2 was found to be a high producer of antimicrobial compounds during fermentation, presenting capability of inhibiting L. monocytogenes and B. cereus, important food pathogens, therefore the strain was considered to be of technological importance for food preservation. The results of the present study have shown that Pediococcus acidilactici M7 and Pediococcus acidilactici P2 isolated from mangaba and puçá by-products have considerable technological aspects thath could be a potential probiotic for product preparation. Therefore, the study of by-products from Cerrado Savannah can encourage the industry to utilize these by-products and reduce the negative impacts on the environment caused by the disposal of by-products.
